Recipe: Easy Summer Salad
Y’all know I love to get in the kitchen and whip up some fresh and delicious meals. Bonus points if the recipes are super easy! I couldn’t wait to try this Nectarine and Lemon Salad from @eyeswoon…one of my favorite culinary IG accounts for amazing and beautiful dishes. This bright, sweet and savory salad is perfect in these the last few weeks of summer. The recipe calls for fresh citrus, melt-in-your-mouth burrata, and sweet nectarines…peaches will work in a pinch!

Nectarine, Burrata, Lemon, and Pickled Onion Salad
Serves 2
Ingredients:
1/2 cup apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
Green coriander seeds
1 large shallot, sliced thin
1 lemon, sliced paper thin
2-3 nectarines or peaches, sliced
2 balls of buratta or buffalo mozzarella, torn
Extra virgin olive oil, drizzle
1 Tablespoon capers
Green coriander seeds for finishing
Fresh cracked pepper
Flaky sea salt to taste
Directions:
Put the sugar, salt, coriander seeds, and vinegar in a sauce pan over medium heat. When it reaches a simmer, turn off the heat, add shallots, and let everything cool.
Line a dish with lemon slices as the base of your salad. Scatter burrata and nectarine slices. Add pickled shallots overtop, but reserve liquid. Finish with coriander seeds, a drizzle of pickling juice, olive oil, fresh pepper, and flaky sea salt.
